homemade salsa (just a blend of random local peppers, an onion, garlic, a roasted tomatillo, lime juice)
chili style multi-bean mixture (this one was a treat because we had a lot of fancy shmancy locally grown beans in the pantry, not just the usual bulk): red beans, black beans, pinto beans, tepary beans, vaquero beans, miso, random peppers, garlic, onions, carrots
cucumber for extra crunch
imitation mozzarella (not miyokos or daiya, but if anybody really wants to know I can check the fridge later)
Tonight I’m making one with chili-bbq fried jackfruit.
